Eggs in a Hole

Take slice of bread. Cut hole in middle. Place on SKILLET and crack an egg in hole. Cook. Then flip to finish cooking flipp last time add slice of cheese. Cook the hole too and enjoy. Easy, quick breakfast!

Curried Shrimp

In frying pan, cook mushrooms and sliced green onions until mushrooms begin to get fragrant.

Add peeled, deveined shrimp, cook until shrimp are pink (just a couple of minutes).

Add sour cream to the consistency you like, season with salt, pepper, and a small amount of curry powder.

Serve over cooked noodles.

Chicken Enchiladas

I take shredded chicken, onion, black beans and hominy, mix in a bowl add sour cream and cheddar cheese.

Wrap in tortillas and place in the bottom of a Dutch oven.

Smother in enchilada sauce and more cheese.

Cook over coals or fire for about 10-15 minutes and it is bubbly and warm. Yum!

 



Cake Donut Bread Pudding & Rum Sauce

1 Stick sweet butter

1 C sugar

2 C heavy cream

1 TBS vanilla

1 1/2 tsp cinnamon

16 cake donuts

1/2 C raisins (optional)

 

Melt butter add sugar, cream, vanilla and cinnamon stir together.

In your pan tear donuts apart and put in pan. Add raisins if desired.

Pour mixture over the donuts.

Bake in Dutch oven for 35 mins checking heat above and under to keep heat even.

For the topping melt together 1/2 stick of butter, 2 C powdered sugar, Rum to taste.

Pour over the donut mixture after it has cooked. Or you can cook in a conventional oven at 350° for 35-40 minutes and cook uncovered for an additional 5 mins. Then add topping.
